When the sides are finished check the pit is even by placing a spirit level across the top.
To control the airflow in your pot shave down a couple of wine corks so that they ll fit in the air holes.
To build a shallow pit bbq dig a square hole in your garden to a depth of 1 brick or cinderblock turned vertically.
Fill a large container with water and allow a few handfuls of hickory to soak in the water for about a half hour.
Place a brick in the bottom of that pot and put a small bbq grate on top of the brick to hold the coals.
One of your clay pots is going to act as the charcoal holder.
This will steam this will sputter and eventually it will smoke.

Next line the sides of the hole with bricks and mortar to make the pit more secure.
